Objective(s)

At the end of the seminar participants are expected to:

  • Relate the importance of GMP, Prerequisite Programs (PRP), CGMP with HACCP, and Food Safety Management Systems (FSMS).
  • Get to know the requirements of the elements of GMP/PRP and have an overview of their development and implementation.
  • Get started & develop GMP/PRP programs for their organization and improve (if already existing) so that regulatory and customer expectations are achieved.
  • Implement the conduct of proper GMP/PRP inspection and/or audit.

Who should attend

Manufacturing personnel directly involved in the production of food products. It could also be a multidisciplinary participant coming from Production, Engineering, Warehouse and Quality Assurance.

Course outline

Session 1- Introduction, Definitions

  1. Definitions- Quality, Food Safety, Contamination, Good Manufacturing Practices, Prerequisite Programs, CGMP, Food Safety & HACCP
  2. Importance of PRP/GMP Implementation and its relationship with Food safety

Session 2 – Good Manufacturing Practice/ Pre-requisite Programs Elements and their
requirements. Elements 1-8

  1. Construction and Layout of Buildings.
  2. Layout of premises and workplace
  3. Industrial Services / Utilities- water, air, and energy
  4. Equipment Suitability, cleaning and preventive maintenance of equipment
  5. Management of Purchased Materials (e.g., RM, PM etc)
  6. Warehousing and storage
  7. Measures for prevention of cross-contamination.
  8. Cleaning and Sanitizing

Session 3 – Good Manufacturing Practice/ Pre-requisite Programs/ Elements and their
requirements (Elements 9-15)

  1. Documented Pest Control Program
  2. Personnel Hygiene & Employee facilities
  3. Rework
  4. Product Recall Procedures
  5. Product Information and consumer awareness
  6. Food defense, Biovigilance and bioterrorism
  7. Waste Disposal

Session 4 –GMP Inspection and Audit.

  1. What is GMP Audit
  2. How to conduct a GMP audit, Reporting GMP audit
